Cannabis Christmas Cook Book

If you are like me, then you love cooking for family and friends whether it be for special occasions or just because you love to see people enjoy a meal you prepared for them.

And if your friends are Cannabis enthusiasts as well, why not spice up those meals and treats by infusing them with your favorite Cannabis oil or Cannabutter this holiday season.

Infusing your own Cannabutter is very personally rewarding and fairly easy to do. But if you are short on time and want a ready to use cannabis oil for all your cooking needs then I suggest the 30:0 Reign Drops (available for order online and in store at our Kimberley and Fernie locations)

For the sake of this article, I will be using Reign Drops 30:0 for most of these recipes.

A few reasons I like using the 30:0 Reign drops for home made edibles is how convenient it is, and because of the ease for measuring exact dosages, effectively leaving out the guessing game for how potent your edibles will be!

Some recipes can be as easy as adding THC oil directly into your mashed potatoes or Gravy

Here is a quick guide on measurements for dosage using 30:0 Reign Drops

1ml = 30mg THC (medium to high dosage depending on your tolerance)

One full bottle of reign 30:0 = 30ml which is 900mg of THC (extremely high dosage and not recommended to use the entire bottle unless it is split between several servings of your edibles)

It is also important to note that you should not cook with this oil if the temperature of your cooking exceeds 350 Fahrenheit as this could result in the THC breaking down and leaving you with a less potent product.

Always remember to start low and go slow when eating cannabis infused food, ingesting edibles can have different results for different people, so give yourself 1-2 hours to start feeling the effects before deciding to help yourself to a second serving.


Nug-Nog

For the first recipe on this list we will Infuse a staple of winter holiday drinks, Egg Nog! (aka Nug-Nog)

Homemade eggnog is a thing of beauty. So rich and creamy, with mouth watering hints of nutmeg and vanilla. There are good brands available at the store, and you could add your Reign 30:0 drops or Salted CannaButter to one of those, but home made is worth the effort. At least once a year! Honestly, it is fabulous. Serve the Nug Nog in 1/3 cup servings, and if your guests want more they do so at their own risk!

Servings 12

THC per Serving 10mg

 

Ingredients:

 

    • 4 cups milk

 

    • 5 whole cloves

 

    • 1/2 teaspoon vanilla extract

 

    • 1 teaspoon ground cinnamon

 

    • 12 egg yolks

 

    • 1 1/2 cups sugar

 

    • 2 1/2 cups light rum

 

    • 4 cups light cream

 

    • 2 teaspoons vanilla extract

 

    • 1/2 teaspoon ground nutmeg

 

Prep Times: 20 minutes Cook Time: 8 minutes Ready In: 6 hours 28 minutes

Instructions:

Combine THC oil, milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil. In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves and let cool for about an hour. Stir in rum, cream, 2 teaspoon vanilla, and nutmeg. Refrigerate overnight before serving.


Ginger Bud Cookies

One of the most classic holiday cookies, the traditional gingerbread man cookie is the perfect shape for creative decorating. The seasonal flavors of these cookies have made them one of the most classic Christmas cookies.

Ingredients:

    • ¾ cup butter, softened
    • 5 ml 30:0 Reign Drops (use more or less at your discretion to get the n potency you desire)
    • ¾ cup brown sugar, packed
    • ¾ cup molasses
    • 1 teaspoon salt
    • 2¼ teaspoons cinnamon
    • 2¼ teaspoons ground ginger
    • ¼ teaspoon ground cloves
    • 1 egg
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 3½ cups all-purpose flour

Directions:n In a saucepan set over low heat, melt butter, then stir in the brown sugar, molasses, spices, salt and your 30:0 Reign Drops

Transfer the mixture to a large mixing bowl, let it cool to lukewarm, then beat in the egg. Whisk the baking powder and soda into the all-purpose flour, then stir these ingredients into the molasses mixture.

Divide the dough in half and pat each half into a thick rectangle. Wrap well and refrigerate for one hour or longer. The dough may be sticky and difficult to roll if not thoroughly chilled, so make sure it’s cold before continuing.

Preheat your oven to 350 degrees Fahrenheit. Set out a few greased baking sheets (or line them with parchment paper if ungreased).

Once the dough has chilled, take one piece of dough out of the refrigerator, and flour a clean work surface. Roll the dough 1/8″ to 1/4″ thick; the thinner you roll the dough, the crispier the cookies will be.

Flour both the top and bottom of the dough if it starts to stick. Alternatively, place the dough on parchment, and put a sheet of plastic wrap over it as you roll, pulling the plastic to eliminate wrinkles as necessary when rolling; this will keep dough from sticking without the need for additional flour.

Dust your gingerbread man cookie cutter(s) with flour. Cut out shapes with a floured cookie cutter, cutting them as close to one another as possible to minimize waste.

Transfer the cookies to ungreased cookie sheets (or, if you’ve rolled right onto the parchment, remove the dough scraps between the cookies). Bake the cookies at 350F, just until they’re slightly brown around the edges 8 to 12 minutes, or until they feel firm. Let the cookies cool on the baking sheets for several minutes, or until they’re set. Transfer them to a rack to cool completely. Repeat with the remaining dough.


Cannabis Cheese Sauce With Broccoli and Cauliflower

Our cannabis-infused cheese sauce can be used for a variety of other dishes such as a dip for corn chips. Learn how to make our cannabis cheese dip below:

    • 2 tablespoons of butter
    • 1 cup whole milk
    • 2 tablespoons of flour
    • 1 and 1/2 cups of cheddar cheese
    • 1 teaspoon salt/pepper
    • 1 teaspoon chilli powder

Directions:

    • Grate cheese and prepare other ingredients
    • Place a small pot on medium-low heat and add butter and flour, stir until foamy
    • Adding milk, stir this foamy mixture and turn up the heat ever so slightly until a simmer forms
    • This cheese sauce mixture will begin to thicken rapidly – once it can coat a spoon, turn off the heat and slowly add grated cheese, one small handful at a time
    • Stir salt, pepper, and chili powder into the cannabis cheese sauce

This cannabis cheese sauce is now added to a baking dish of cooked cauliflower and broccoli which will be roasted along with the turkey and other items in this holiday feast. Add the cheese sauce after the vegetables have been roasted in the oven.


Infused Mashed Potatoes

Mashed potatoes are a staple of many different meals, including the annual holiday feast. Adding the turkey gravy to these mashed potatoes will create an irresistible combination.

    • Peel and clean potatoes. Cut into squares
    • Place a pot of salted water on medium heat and boil
    • Now, add potatoes and cook for 12-15 minutes
    • Drain potatoes and then place back into the pot – reduce heat to medium-low
    • Add 1 cup of whole milk, 2 tablespoons of butter and your choice of herbs to the potatoes
    • Mash potatoes until smooth and then fluff with a fork.

Cannabis mashed potatoes can be eaten on any occasion, a perfect complement to any roasted dish. Remember to add the turkey gravy to your mashed potatoes when serving.


Cannabis-Infused Turkey Gravy

When you remove the turkey from the oven, collect all of the drippings in your large oven dish. Take these drippings and transfer them to a pan.

    • Place the pan on medium-low heat
    • Add flour and stir well, depending on the amount of turkey gravy you have, you will have to judge the amount of flour you use appropriately
    • Season turkey gravy with salt and pepper and taste for quality control.

Place turkey gravy into a gravy boat and serve with your turkey.


Canna Taffy Apple Popcorn Clusters

Ingredients:

    • 2 tablespoons canola oil
    • 1⁄2 cup popcorn
    • 4 ounces butter
    • 2 cups sugar
    • 4 to 6 drops Granny Smith apple oil
    • 2 teaspoons kosher salt
    • 1⁄4 cup roasted peanuts, chopped
    • Vegetable spray, as needed

Instructions:

In a pot, combine oil and popcorn, place over medium heat and cover the pot. Once the corn starts popping, shake the pan every couple of minutes to prevent burning.

Once the popping slows down, remove from the stove and empty contents into a large bowl; set aside

In a large heavy-duty skillet, melt the butter over medium-high heat with the sugar and stir completely to incorporate mixture. When the mixture melts into a golden-brown caramel, remove from the heat and add the apple oil, salt and your desired amount of 30:0 THC Reign Drops. Mix vigorously.

Pour caramel into the bowl with the popcorn and peanuts, mixing completely to coat. Pour caramel corn onto a sheet pan coated with vegetable spray and let cool. Break up into clusters.

Makes about 15 small clusters, each about 8 mg THC if you used the recommended 4 ml of reign drops


Cheesy Stuffing Balls

    • 1 6-ounce box stuffing mix
    • 3 eggs, beaten, separate use
    • 1⁄2 onion, finely chopped
    • 2 tablespoons parsley, chopped
    • 1 tablespoon canna oil
    • 8- to 10-ounce block gouda cheese
    • 2 1⁄2 cups panko breadcrumbs
    • Vegetable oil for frying

Instructions:

In a medium-large pot, make stuffing according to box directions. Cool and refrigerate (up to four days) for later use or continue with the recipe.

Transfer stuffing to a large bowl, breaking up clumps with your hands. Add 1 beaten egg, onion, parsley, 4 ml of 30:0 Reign Drops, and canna oil.

Mix well. Cold stuffing will soften as it comes to room temperature.

Slice cheese into 3⁄4-inch cubes. Shape a ball around each cube of cheese, dip into remaining eggs and roll in panko.

Fill to halfway a heavy-duty pot with vegetable oil and heat until a thermometer reads 350 F.

Using a slotted spoon or spider strainer, carefully lower the balls into the oil and fry until golden brown, about 5 to 7 minutes.

Remove to a paper towel-lined sheet pan to drain, then serve immediately. If making a large batch, hold the fried balls in a preheated 200 F oven while frying the rest until ready to serve.

Makes about 12 balls, each about 10 mg THC based on suggested amount of 30:0 Reign Drops
